Method

Prepare the Cake
• Preheat oven to 180°C. Grease and line one 8 inch round tin.
• Sift flour, cocoa powder, baking powder and baking soda in a bowl.
• In another bowl whisk eggs and sugar until light and slightly fluffy.
• Add oil, milk and vanilla essence. Mix well.
• Slowly add dry ingredients and fold gently.
• Add hot water or coffee and mix until smooth batter forms.
• Pour into tin and bake for 35 to 40 minutes. Check with a toothpick.
• Cool completely and slice into two layers.

Make the Fudge Frosting
• Heat fresh cream and butter until just warm.
• Add chopped dark chocolate and stir until melted and glossy.
• Mix in icing sugar and let the frosting cool till slightly thick.

Assemble
• Place first cake layer on a plate. Spread generous frosting.
