Method
• Preheat the oven to 180°C. Grease and line a 7 inch cake tin.
• In a bowl, whisk together mango pulp, sugar and oil until smooth.
• Add milk and few drops of vanilla essence. Mix well.
• Sift flour, baking powder and baking soda into the wet mixture.
• Gently fold everything together.
• Pour the batter into the prepared tin and tap lightly to remove air bubbles.
• Bake for 30 to 35 minutes or until a toothpick inserted in the centre comes out clean.
• Let the cake cool completely before frosting.
For the frosting
• Beat chilled cream with powdered sugar until soft peaks form.
• Add mango pulp and beat lightly again.
• Spread over the cooled cake and decorate with mango cubes if you like.
