Ingredients
• 2 ½ cups all-purpose flour
• 1 ½ cups granulated sugar

• 2 large eggs
• 1 cups buttermilk
• 1 cups vegetable oil

For Frosting
• 450 grams cream cheese, softened
• 115 grams unsalted butter, softened
• 4 cups powdered sugar, sifted
• Few drops of vanilla essence
Steps
• Preheat your oven to 175°C (350°F).
• Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
• In a large bowl, whisk together 2.5 cups all-purpose flour, 1.5 cups granulated sugar, 2 tablespoons cocoa powder and ½ teaspoons baking soda.
• In a separate bowl, beat 2 large eggs lightly, then whisk in 1 cups buttermilk, 1 cups vegetable oil, pinch of red food colour, and few drops of vanilla essence until smooth and well combined.
• Gradually pour the wet ingredients into the dry ingredients, folding gently until just combined.
• Add 1 teaspoons white vinegar last
• Divide the batter evenly between the two prepared pans.
• Bake for 28 to 30 minutes, or until a toothpick inserted in the centre comes out clean.
• Cool the layers
Make the cream cheese frosting
• Beat 450 grams cream cheese, softened and 115 grams unsalted butter, softened together on medium-high speed until fluffy, about 3 minutes.
• Reduce speed, gradually add 4 cups powdered sugar, sifted, and then mix in few drops of vanilla essence
Frost and assemble:
• Place one cake layer on a serving plate and spread a generous layer of frosting on top.
• Place the second layer on top and frost the top and sides evenly.
• For a naked-cake look, leave the sides lightly covered.
• Refrigerate for at least 30 minutes before slicing.
• Serve and enjoy!
