GUANGZHOU, China – A European restaurant group operating across several major cities has changed the way it evaluates takeaway paper bowls after recurring leakage, softening and sustainability concerns exposed the limitations of choosing packaging by coating type alone.
The group serves a broad menu ranging from salads and chilled meals to hot curry, tomato-based soups and spicy noodle dishes. As its menu expanded, the same paper bowl specification was increasingly expected to handle very different combinations of heat, oil, acidity, moisture and delivery time.
That created a practical packaging problem.
Its previous single-PE-coated paper bowls performed adequately for lighter applications, but problems became more visible when they were used for high-temperature, oily and acidic foods. After more than 30 minutes in delivery conditions, some bowls showed softening around the seams and base, with leakage occurring in demanding applications such as hot curry noodles and tomato-based soup.
For the restaurant group, the issue was not simply a matter of changing suppliers. The purchasing team needed to understand why a specification that worked for one menu category could become unreliable when the food, temperature and delivery conditions changed.
Moving Beyond the Coating Label
The group initially explored PLA-coated paper bowls as part of its sustainability transition. The reasoning was straightforward: PLA is associated with bio-based materials and industrial composting, making it attractive for brands looking to reduce reliance on conventional plastic coatings.
The operating reality was more complicated.
In some high-temperature food applications, the PLA-coated bowls did not provide the performance the group expected. At the same time, the availability of suitable industrial composting infrastructure varied between the markets in which the restaurant group operated.
The result was a useful lesson for the purchasing team: a material's environmental positioning cannot be evaluated separately from the food application or the waste-management system available after use.
The group therefore began a broader technical evaluation covering three coating approaches: PE, PLA and aqueous coating.
Testing the Finished Bowl, Not Just the Paper
With technical support from its packaging supplier, the restaurant group evaluated the three coating systems against the conditions its stores actually faced.
The assessment considered resistance to heat, oil, acidic sauces and liquid foods, together with structural performance after the bowl had been formed.
This distinction was important.
A flat sheet of coated paper can provide useful information, but a finished paper bowl contains additional variables. The side seam, bottom construction, folding points, adhesive system, board structure and forming process can all affect how the package behaves once filled.
For hot curry, spicy noodles and tomato soup, the team therefore focused on the finished bowl and subjected samples to demanding food-contact conditions designed to reflect real takeaway use.
The testing also examined repulpability and the potential end-of-life route for aqueous-coated structures, rather than assuming that the word “water-based” automatically meant recyclable.
This approach changed the purchasing conversation.
Instead of asking which coating was the most sustainable in isolation, the team began asking a more practical set of questions: What food will go inside the bowl? How hot is it? How oily or acidic is it? How long will it remain in the package? How will it travel? And what happens to the bowl after disposal in the specific market where it is sold?
One Restaurant Group, More Than One Packaging Specification
The final decision was not to select one coating for every application.
For high-oil, high-temperature foods and longer delivery routes, including hot curry and soup-based noodles, the group retained high-quality PE-coated structures for selected applications while also evaluating high-performance aqueous-coated structures where testing supported their use.
For salads, Poke-style meals and lighter foods with shorter holding times, the group moved toward aqueous-coated paper bowls where the finished product could meet the requirements of the applicable paper recovery system.
The result was a scenario-based packaging specification rather than a single company-wide coating rule.
This reflects a wider issue facing foodservice packaging buyers. A paper bowl is not simply a sheet of paper plus a coating. Its performance depends on the interaction between the board, coating, printing, adhesive, forming process, food and operating environment.

The project also changed the restaurant group's internal purchasing process.
Previously, coating terminology played a significant role in supplier comparisons. Following the testing program, the purchasing team adopted a broader evaluation principle: packaging should be assessed as a finished product rather than according to a single material claim.
That means considering the paperboard, coating, printing inks, adhesives, forming process and final bowl structure together.
The approach also helped the group respond to sustainability and regulatory discussions in European markets. Rather than relying solely on terms such as “compostable,” “bio-based” or “water-based,” the team requested technical documentation and finished-product test information relevant to the intended application and local recovery infrastructure.
The change reduced the risk of choosing a packaging material for its label rather than for its actual performance.
A Practical Lesson for Foodservice Packaging
The case illustrates why foodservice packaging decisions can become complicated when menus, delivery conditions and sustainability requirements change at the same time.
PE, PLA and aqueous coatings each have different characteristics and potential applications. None should be treated as a universal answer without considering the complete packaging structure and the conditions in which the finished bowl will be used.
For restaurant groups operating across multiple markets, the decision may also need to account for differences in local waste-management infrastructure.
